THE PONCHO'S PROCESS
With the growth and expansion of our restaurants, we found it necessary for consistency in standard of taste, flavor, and quality to open an initial prep and distribution center. We start fresh every day. Since the quality of our food starts with this process, the integrity is closely applied and supervised by the owners, along with their brothers, sisters, and in-laws.
Even their mother, wakes up early every day to help with the daily prep. When Mama says, "let's pick up the pace", or "let's clean up", all stand at attention. Family, respect, and values are a process, even in the kitchen.
This process allows for quality control of produce, meat, and the conservation of family recipes. The distribution center also allows for careful calculation of distribution to make sure that the individual restaurants are not overly stocked and have fresh ingredients to use every day.
